  • Lemon juice2 tbsp.
  • Avocados, diced2 whole
  • Spinach2 cup(s)
  • Frozen biscuits12

DAIRY

  • Milk2 tbsp.
  • Cheddar cheese, shredded1 cup(s)
  • (1 dozen) eggs12

PANTRY

  • Hot sauce1 tbsp.
  • Chipotle or other mayonnaise
  • Salt
  • Pepper

Instructions


  1. BAKE: Frozen biscuits.

  2. STIR TOGETHER: Eggs with milk, hot sauce, and salt and pepper.

  3. TOSS: Lemon juice over avocado.

  4. HEAT: Chopped smoked sausage until lightly browned.

  5. ADD: Egg mixture and gently fold together with flat spatula.

  6. WHEN ALMOST DONE, ADD: Avocado and cheese fold again.

  7. ADD: Spinach to wilt.

  8. SPREAD: Mayo on biscuit halves.

  9. TOP: With sausage egg-o-cado mixture. Snazz up that plate with some fresh fruit and show morning who’s boss.

  10. Swap: English muffins or toast for biscuits. Cannellini beans or roasted butternut squash for avocado.
